Now, I don’t take spanish. In fact, I haven’t taken Spanish since the 6th grade. A good 6 years. This does not stop me from loving some delicious mexican food though.

Taco Salad

Recipe:

Romaine Lettuce
Sweet Corn
Broccoli (not normal, but a favorite veggie of mine)
Tomatoes
Carrots
Spicy Refried Beans

Spicy Quesedilla

Recipe:

2 La Tortilla Wraps
1/2 Tomato thinly sliced
Mozzarella Cheese
Trader Joe’s Smooth & Creamy Spicy Hummus

Love Affair

Yes, it’s true. I am having a love affair…with xanthan gum and guar gum. I have been sick for the past three days so smoothies are my best friend. Not to mention the only way I am getting fruits because the thought of eating fruits or veggies makes me gag.

Heather’s Chocolate Protein Ice Cream

no words. just too darn tasty :]

Strawberry “Shake”

1 cup vanilla soy milk
2 large handfuls of whole, frozen strawberries
2 handfuls of ice cubes
1/2 tsp. guar gum
1/4 tsp. xanthan gum

Just pour everything into a blender and blend :]

Green Monster Ice Cream

To say the least, the green monster movement has taken over. It is so common to see green monsters consumed by you lovely bloggers. Now, I love me some green monster. But a smoothie just does not fill me up. It needs more substance and lots of volume. Enter my creation – Green Monster Ice Cream.

Recipe:

2 huge handfuls of fresh baby spinach
1 medium frozen banana
2 large handfuls of ice cubes
1 cup of vanilla soy milk
1/2 tsp. guar garm
1/4 tsp. xanthan gum

add ingredients into the blender
blend [I use ice crush mode, but do what you normally would do]
pour into cute bowl
enjoy!

Eating healthy never tasted so good :]
