Green Monster Ice Cream

To say the least, the green monster movement has taken over. It is so common to see green monsters consumed by you lovely bloggers. Now, I love me some green monster. But a smoothie just does not fill me up. It needs more substance and lots of volume. Enter my creation – Green Monster Ice Cream.

Recipe:

  • 2 huge handfuls of fresh baby spinach
  • 1 medium frozen banana
  • 2 large handfuls of ice cubes
  • 1 cup of vanilla soy milk
  • 1/2 tsp. guar garm
  • 1/4 tsp. xanthan gum
  1. add ingredients into the blender
  2. blend [I use ice crush mode, but do what you normally would do]
  3. pour into cute bowl
  4. enjoy!

Eating healthy never tasted so good :]

    P.S Thanks so much for the comment on my blog. I actually used a really runny brand of PB (Krema Creamy) so it was easy to drizzle. Peanut butter and Jenny has said that if you hold a spoonful of peanut butter over a hot pan (like on the stove with oatmeal cooking then it melts…wow, bad description!   17. I love a nice thick bowl of green monster. I used to use frozen blueberries in the mix all the time, and it seemed to really thicken things up too. 😀

  21. That definitely looks like it would be more filling than the average smoothie.. and more delicious. I think I really need to get me some of those gums, I want thick smoothies/ice cream!

    I hope xantham gum isn’t too expensive, I want to try this. A little sceptical about the spinach, but hey, I’m known for my weird tastebuds :p

    • xanthan gum is a little pricey…okay its very pricey. its about $13.75 (atleast at my grocery store) but it does last FOREVER since you use so little. i’ve been using it for weeks and i have barely made a dent in the bag. so worth it!
